Chocolate Heavenly Bite Mini Tarts
Mini Tarts that deliver a rich Chocolate Pie with a hit of Southern Comfort. Sure to serve a crowd and please your chocolate lover. Serve with a dollop of whipped creme.

  1. Preheat oven to 350 degrees. My Mini Tart Pan holds 24 mini-tarts.
  2. On clean surface or granite, sprinkle flour. Unroll pie shell flat onto flour. With a rolling pin, roll back and forth several times to flatten crust. Using a 2″ biscuit cutter, working from edge press down on crust. Continue pressing down and making as many mini crusts as possible. Using a fork, place many holes into the sides and bottom of crust.
  3. Pull away extra dough on edge and add to bowl. With a spatula, lift each crust and place over the mini tart pan to fill the holes. Using a muddler tamp crust down into mini tart pan. Continue until pan is filled and set aside. Add excess dough to bowl to reroll as needed. Complete this process with the remaining crusts, place crust on wax paper until ready.
  4. On low heat, add coconut oil and heat for one minute. Add in sugar and stir well.
  5. Continue cooking and add in flour to mixture and stir well.
  6. Continue heat on low, add in Chocolate chips to mixture and stir well. Once chocolate is melted remove from heat.
  7. Add in Southern Comfort and stir. With spoon in hand, pour in eggs and stir until combined with chocolate mixture.
  8. Add chopped pecans to chocolate and blend well.
  9. Using a heaping teaspoon scoop chocolate mixture in to mini crusts.
  10. Bake in oven for 15 minutes. Set aside to cool. Do not overcook. =-
  11. Lagniappe: Mini tarts may be served as is or serve with a dollop of whipped cream. The cream adds another layer of flavor.
