Company’s Coming-Premade Steeped Side Salad.
Easy to make premade side salad that requires a minimum of 24 hours for the flavors to steep. French cut green beans, Shoe-peg corn, Sweet Early Peas, onions, curler, candied Jalapeno and carrots marinated over a dressing.

  1. In large bowl, add sugar, vinegar, cayenne and anchovy. From the anchovy tin add the olive oil to bowl. Stir until the anchovy has melted away into the dressing. I used a muddler to blend the ingredients together well.
  2. Introduce the green beans, corn, peas, celery, onions and candied jalapenos to the dressing.
  3. In a small pot on high heat the water. Once it reaches boiling add the carrots to blanch for 1.5 minutes. Set a timer so that you don’t overcook. Add water and carrots to the party and stir well. Once dish is blended well and cooled place in refrigerator to marinate.
  4. Salad will need to steep overnight in order for the flavors to marry together well. Serve as main course side salad. Serve along side a quiche, soup or sandwich.
