Quiché- Albacore Tuna Spiced Up? Wow! I never expected the delicious flavors that this Quiche delivers. Although, I know using quality ingredients cooked properly will yield good results. Creating recipes adding unique items together and blending flavors is a challenge that I enjoy. Yet, success escapes me at times.
Grill Man is my favorite taste tester, although I don’t always like to hear his comments. If he doesn’t like something that I have cooked, I know he will convey his honest opinion. Then, the hard part is that I have to decide what to do with this information and how to interpret. Many times I may cook a dish until we love it.

Always pick the best quality ingredients possible for you and your family. My preference is wild caught albacore tuna. Truly, Grill Man needs to get back on the water and soon to fill up my freezer. For adventure on the water charter a boat with friends or family. Boat captains typically make sure a fish haul if possible.
Deep Sea fishing is a great way to spend the day. Fishing on the Gulf Coast is fabulous with extremely varied species in Gulf waters. Wild Caught tuna is available for you to reel in if your willing to go out far enough. You must be willing to fight for your catch.

Smoky Egg Pie with Sausage and Onions Date
Peeps, chickens and Egg Pie
- 1 Pie Crust room temperature
- 1/3 Cup Red Onion Chopped
- 1/3 Cup Green Onion Chopped
- 1/3 Cup Red Bell Pepper Sweet Petites Chopped
- 1/2 Cup Cheddar Cheese Grated
- 5 Ounce Albacore Tuna, wild caught Drained
- 8 Turns Black Peppercorns Freshly Ground
- 6 Eggs Beaten
- 2/3 Cup Heavy Cream
- 1/8 Teaspoon Chipotle Chili Powder
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Parsley Dried
- 1 Sprinkle Cayenne
- Preheat oven to 350 Degrees.
- Unroll crust and center on oven pie plate. With palm press on crust on bottom and edge. With fingertips pinch and form crust edge around the pie plate. With a fork, press many holes into side and bottom of crust.
- Add and evenly divide the items on top of the crust in the following order: green onions, red onions, and bell pepper. Scatter tuna and break up any large pieces. Scatter cheddar cheese on top of tuna. Grind 6 turns of peppercorns over mixture.
- In mixing bowl, add eggs, cream, salt, chipotle chili powder and blend. Sprinkle cayenne.
- Bake for 350 degrees until golden brown for 35-40 minutes.
