Preheat oven to 350 degrees. In a glass pie dish, unroll pie shell and place in middle. Center shell as needed. With fingertips press down on crust in dish. Using your fingertips, pinch the dough and press down on the side to form crust edge. Using a fork, place many holes into the sides and bottom of crust.
Evenly place the cooked sausage on the bottom of pie crust.
Sprinkle in the green onions. The larger the onion piece, the bolder the onion bite. To reduce boldness, chop onions finer. Sprinkle in the pimento.
In a small mixing bowl, add eggs and whip them good. Combine the eggs, salt, chipotle adobo sauce, chopped chipotle and blend well.
Pour evenly over the pie shell. Using a pepper mill, give a couple of turns over pie.
Bake in oven for 35-40 minutes or golden brown. Allow to sit for minute before cutting. Serve not.

1/2 cup Monterey jack cheese
