Like most of us, I enjoy a creamy crunchy coleslaw. Although a main ingredient mayonnaise is not part of my new weight reduction plan. It is hard to think of picnics, BBQ, fried chicken or seafood without coleslaw. I wanted to create a fresh side dish recipe without mayonnaise. Vinegar , sugar and spice would have to replace the mayonnaise in my fresh side dish. Prepare my recipe for Unprocessed Candied Japapeno Coleslaw that even my Dad loved.
In the process of heating the magic sauce, my Dad walked into the kitchen and complained about the strong vinegar smell. He has a strong aversion to all things vinegar. At that point, I wondered if he would even eat the salad.
With his complaint officially registered, I had my doubts if he would make a happy plate. Would I attempt his method of parenting about food? I can almost hear me saying, “Here is a big spoonful. You can’t leave the table until your plate is clean. And Mother can’t save you.”
Can you hear the evil cackle?
I’m not sure if this glimmer into my childhood is making you cackle or not, but I’m laughing. Oddly enough even with his vinegar aversion, my Dad enjoyed the Unprocessed Candied Jalapeno Coleslaw. Pretty sure that it surprised even him.
What to do if little ones don’t want Unprocessed Candied Jalapeno Coleslaw?
My nephews also tried the coleslaw but I didn’t ask for a review. Little one manages to lick his lips on cue for photo opp. However they both enjoyed the corn pudding and caramel cake that I served along with the coleslaw. It takes time for little ones to really enjoy food unless its pizza, burgers, or sugar.

Recipe uses heated vinegar, sugar combination to pour over fresh cut cabbage, carrots, red onion, bell pepper and candied jalapenos.

- 1 Cabbage medium
- 4 Carrots peeled
- 1 Red Onion Chopped
- 1 Red Bell Pepper Chopped
- 1/2 Cup Candied Jalapenos Chopped
- 1 Teaspoon Salt
- 1 Teaspoon Black Pepper Freshly ground
- 1/2 Teaspoon Celery Salt
- 1/4 Teaspoon Cayenne
- 3/4 Cup Sugar
- 1/2 Cup olive oil
- 1/2 Cup Apple Cider Vinegar
- 2 Tablespoon Fish Sauce
- Wash cabbage. Remove the outer leaves and toss. On cutting board cut the very end off that will remove most of the core.
- Place core side down and with large sharp knife cut cabbage in half and in half again. With each section hold the knife and cut on a diagonal to cut into smaller shredded pieces. Ideally you want about one inch thin pieces. Add to a very large bowl.
- With peeled carrots cut both ends and toss. Cut carrots into 3-4 " pieces long. Cut each piece in half down the middle. Lay each piece flat and cut into thin pieces and then chop into a 1/2" piece. Add to bowl
- Add onions, bell pepper, candied jalapenos, salt, pepper, celery salt and cayenne.
- In a small saucepan add all ingredients. On medium heat heat until the sugar dissolves. Pour over cabbage mixture and stir well for about five minutes. Taste and adjust cayenne as needed. Slaw flavors will continue to marry together as it blends over time.
